Tasting Notes
Gerardo's honey-processed coffee is delightfully sweet and citrusy. The micro-aging with a cherry dessert wine brings forward a milk chocolate note. The roaster chose a medium roast, allowing the hint of caramelization to develop. The result is a sugary, semi-floral nose with an oaky depth and silky mouthfeel. This is a treat of a coffee that lingers in all the right places.
Coffee Farmers: Gerardo and Fátima Peñalba
The roots of this coffee stretch far, entwined with a love story nearly a century in the making. The beans come from Gerardo and Fátima Peñalba, third-generation farmers who inherited their family’s coffee farm when they married. Together, they nurtured the land, refining their craft and building a legacy of quality and sustainability that has flourished for almost 100 years.
Micro-aging & Roasting
Roaster Liona Lutes brings this coffee to life. She carefully selects the beans and oversees the micro-aging process using her signature “stave method.” Instead of aging coffee in full barrels, she places oak staves—previously infused with spirits—into the green coffee beans, allowing for a delicate infusion of flavor without overpowering their natural complexity.
